Been making my own mayo for just about a year or so...but, I gotta tell you, Duke’s Mayo is THE BEST! I know, I know, they use oils and things that are bad for the body, but dam...THE TASTE IS WHAT MAKES IT! Mine is pretty great, but it ain’t Dukes! I guess mine is the lack of consistency in what goes in. One whole farm fresh egg, two extra egg yolks, yellow mustard, avocado oil, salt, pepper, apple cider vinegar, garlic powder, onion powder, paprika and lemon juice. Then the immersion blender with a SLOW rise up through the mixture until thick and smooth.
